Shaved Brussels Sprout Salad with Toasted Almonds

This salad is one of my absolute favorites. I love it as a side alongside a hearty soup or stew or as the main attraction with some protein (my favorite is shredded chicken) added in. Packed with seasonal veggies, healthy fats and tasty ingredients, this will be one of your go-to-throw-together winter salads when you’re looking for something nourishing and simple.

Ingredients:

For the salad:

  • 4 cups shaved Brussels sprouts

  • 1 apple, chopped, no need to peel

  • 3/4 cup sliced or slivered almonds, toasted

  • 1/3 cup grated Pecorino Romano

For the dressing:

  • 1/3 cup extra virgin olive oil

  • 1/4 cup fresh lemon juice (usually ~1 lemon)

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon honey

  • 1 tablespoon mustard

  • 1 teaspoon garlic powder

  • Sea salt and freshly ground black pepper

Directions:

Step 1: Thinly slice the Brussels sprouts using a mandoline if you have one. If you don’t have one, you can thinly slice using a knife or you can purchase pre-shaved Brussels sprouts. Place them into a medium bowl.

Step 2: Chop the apple into 0.5-inch size cubes. Add to the Brussels sprouts.

Step 3: Toast the almonds over medium heat until they begin to brown and become fragrant. While this step is optional, I think it makes the salad! It adds extra depth to the flavor of all the ingredients. Allow the almonds to cool for a few minutes.

Step 4: While the almonds are cooling, make the dressing. Add all ingredients to a bowl and whisk to combine.

Step 5: Add toasted almonds, Pecorino Romano and dressing to the Brussels sprouts. Toss everything to combine.

Step 6: Let the salad sit for a few minutes, then taste and adjust the seasonings. Enjoy!
