Chia Seed Pudding with Blueberry Coulis

Chia seed pudding with blueberry coulis.

Before you write this off, know that this chia seed pudding is a step above the usual. Greek yogurt adds staying power (hello, 15 grams of protein), and a simple blueberry coulis takes it from basic to special. In a pinch, fresh fruit works—but if you have a few extra minutes, the coulis is worth it.

Both the chia seed pudding and coulis can be batch prepared in advance, making this a balanced, simple breakfast option all week!

Ingredients:

For the Chia Seed Pudding:

  • 1/2 cup chia seeds

  • 1 cup almond milk

  • 2 cups Greek yogurt

  • 1/4 cup honey

For the Blueberry Coulis:

  • 1 cup blueberries

  • Juice from 1/2 lemon

  • 1 tablespoon honey

Directions:

Step 1: Place the chia seeds, almond milk, Greek yogurt, and honey in a bowl. Mix well to combine. Allow to sit for 2-3 minutes. Mix again until there are no more chunks. Cover and place in the refrigerator for at least 2 hours, preferably overnight.

Step 2: Meanwhile, prepare the blueberry coulis. Add blueberries, lemon juice, and honey to a sauce pan over medium heat. Stirring frequently, allow the blueberries to burst. Let cook for about 10 minutes, or until you’ve reached desired consistency. Let cool to room temperature and store in the refrigerator.

Step 3: Scoop out a serving size of chia seed pudding and top with the blueberry coulis, along with any other desired toppings (I like adding walnuts or pecans). Enjoy!
