Healthier Apple Crumble with Maple Vanilla Whipped Cream

Once October hits, I’m ready to embrace warm, cozy flavors. One of my favorite pieces of produce that fall brings are crunchy, juicy apples. Apples are packed with vitamins, minerals, and fiber making them a nutrient-rich choice, and when they’re paired with a bit of cinnamon? The perfect fall treat! I love making this recipe for dessert, but it could double as a tasty breakfast or snack too. Additionally, if you’re looking for a bit more protein, you can sub out the heavy cream used to make the whipped cream topping with Greek yogurt. You’ll love this recipe because it’s ready in 45 minutes, it’s extra cozy and it’s packed with fiber.

Ingredients:

For the Apple Crumble:

  • 2 apples, cubed (don’t worry about peeling them)

  • 2 teaspoons cinnamon

  • 1 teaspoon maple syrup

  • 1 cup oats

  • 1/4 cup walnuts

  • 1 tablespoon brown sugar (can sub maple syrup, or can omit)

  • 1 tablespoon butter, cubed

For the Maple Vanilla Whipped Cream:

  • 2 cups heavy cream (can sub Greek yogurt)

  • 2 teaspoons vanilla extract

  • 1 tablespoon maple syrup

Directions:

Step 1: Preheat the oven to 350 degrees.

Step 2: Cube apples and put them in a bowl. Add cinnamon and maple syrup. Toss until the apples are coated evenly.

Step 3: Add oats, walnuts, and brown sugar to another bowl. Mix to combine. Add in cubed butter and mix until butter is distributed evenly.

Step 4: Grease a baking dish with olive oil and add the apples to the bottom. Distribute the oat mixture evenly on top of the apples. Roast in the oven for 35 minutes, or until apples are soft and oats are browned.

Step 5: Meanwhile, combine the heavy cream, vanilla extract, and maple syrup in a bowl. Using a hand whisk, handheld or stand mixer, whip on medium-high speed until medium peaks form, about 4-5 minutes. Once desired consistency is achieved, put in the refrigerator until the apple crisp is done.

Step 6: Add a scoop of the apple crisp and a scoop of the whipped cream to a bowl. Enjoy!
